Working in threes is how the house tests a palette. The shape stays fixed so nothing but colour can account for the difference: one goes dark and dense, one goes hot, one goes cold and deep.

Each trio is finished in the same sitting, so the three read as one statement. They can be taken separately, but the set reads best with all three together — which is why it is quoted, and stocked, as a trio.
